- 2 tbsp vegetable oil
- 2 tbsp crushed fresh garlic
- 2 stalks green onions (finely chopped)
- 2 tbsp fresh garlic (minced)
- 1 medium shallot (finely chopped)
- 1/4 cup chopped fresh cilantro
- 1 jalapeño (finely diced and seeded)
- 1 tsp kosher salt
- 1 tsp Sichuan peppercorn (freshly ground)
- 3 Dungeness crab (cleaned, boiled, segmented)
- Clean and boil crab (do this right before you stir-fry; avoid crab prep the night before or too early in the day)
- Heat wok on high, add vegetable oil (5-10 seconds)
- Add garlic, green onions, ginger, cilantro, shallots, and jalapeños; stir fry (30 seconds)
- Add crab legs; toss
- Return heat to medium and toss all seasonings and crab
- Sprinkle on salt and peppercorn
- Toss once more before plating!
- Serve immediately
